Every coffee begins long before
harvest, in our Genetic Bank, where
carefully selected mother plants
are preserved. Only seeds from
these mother plants are
propagated. This protects varietal
identity, stabilizes flavor potential,
and ensures that what is planted in
the field is structurally true to its
lineage. Variety integrity is not
assumed — it is safeguarded from
the very beginning.

Integrated Coffee Pulse,
real time monitoring

Once planted, each lot is managed through Integrated Coffee Pulse, the precision agriculture platform developed by Juan Peña. Beneath the soil, sensors monitor nutrient levels and water availability at root depth. Above ground, plant health, pest presence, and vegetative growth are mapped and recorded. Drying rooms are equipped with environmental sensors. Every variable (irrigation, fertilization, evapotranspiration, humidity, temperature) is measured and adjusted in real time.

This continuous feedback system allows us to influence one of the most important physical characteristics in specialty coffee: bean density. By optimizing carbohydrate accumulation during cherry development and controlling drying conditions with precision, we create exceptional homogeneity. For roasters, this means predictability. For the cup, it means clarity.
